Job Description

Haile-Manas Academy (HMA) is a premier private co-ed residential school, established for the education of Ethiopia’s most promising and motivated secondary students. The school provides its students a world class education and strives to help transform the education available to all Ethiopian students. HMA is located in Debre Birhan.  

HMA is seeking a Director of Dining Services to oversee its food services operation, a critical element of the residential experience. Under the general supervision of the Deputy Head of School, the Director of Dining Services will oversee all elements of HMA food services, ensuring the delivery of consistently prepared, high-quality meals and a pleasant dining experience for students and staff, efficient, cost-effective procurement and inventory control, a work environment that adheres to the highest standards of food and employee safety, and a positive work culture consistent with school values. 

The position is open immediately.

PRINCIPAL DUTIES AND RESPONSIBILITIES  

  • In coordination with school administration, designs nutritious, high-quality menus that are updated from time to time, taking into consideration community needs/desires, sustainability goals and budget guidelines

  • For each item served, develops standard recipes and techniques for preparation and presentation to assure consistently prepared, high-quality meals 

  • Establishes and enforces portion control for all items served to minimize wastage and lower food costs 

  • Cooks or directly supervises the cooking of items that require skillful preparation

  • Ensures that all meals are served on time, that quantities are sufficient and available throughout the service period, and that meals service for students and staff is conducted in a highly professional, efficient and welcoming manner

  • Takes the lead in the hiring process of kitchen staff 

  • Designs and implements kitchen staff weekly schedule and monitors weekly day offs and annual leaves of the kitchen staff in collaboration with the HR office 

  • Establishes and implements training and evaluation programs for kitchen staff; promotes employee growth and development through prompt, constructive feedback 

  • Ensures the highest standards of sanitation and cleanliness in kitchen areas and with respect to food handling and food safety 

  • Provides training to kitchen staff and ensures compliance with occupational health and safety rules, regulations and best practices

  • In coordination with the procurement department and school storekeepers, establishes best practices for procurement and inventory control consistent with overall dining services goals.

  • Conducts regular inventories of food supplies and assesses projected needs

  • Maintains appropriate levels of stock and raw ingredients and other kitchen supplies 

  • Establishes controls to minimize food and supply spoilage or waste 

  • Analyzes and monitors costs (material, energy, and staff) to ensure efficient use of resources and initiates corrective action whenever necessary

  • Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment

  • Coordinates with the facilities department to proactively carry out preventive maintenance of kitchen equipment and areas; promptly reports any problems with kitchen equipment or in kitchen area and follows up on repairs 

  • Other duties as may be assigned

EDUCATION/EXPERIENCE 

  • Bachelor's degree or equivalent in Food Sciences, Food Production, Nutrition, Hotel/Tourism, Catering or related field

  • Certification/training in workplace safety

  • Minimum of five years relevant experience

  • Strong communication skills in both Amharic and English

  • Excellent computer skills (Microsoft Word and Excel)
