Purpose of the Job:
As a Sous Chef of the Pastry & Bakery Department, you are a masterpiece creator and food waste reducer. You will have the opportunity to create luscious desserts and breads that are both appealing to the eye and the palate with customer service at the heart of everything you do. The individual must be creative with their Pastry & Bakery creations and continually research and test new and different dessert and baking recipes to ensure that members have an exceptional dining experience. You are responsible for handling, preparation and storing perishable products. You will adhere to HACCP guidelines to ensure efficient, safe and sanitary food production, preparation and presentation.
PRIMARY RESPONSIBILITIES
v Creating custom Pastry & Bakery items from recipes, planning, and supervising the production of the Pastry & Bakery Department
v Creating & developing new seasonal & holiday menu recipes, and test new flavors
v Prepare food items according to guest requests and food recipes
v Maintain and order food inventory, including fresh produce, dairy products and other Pastry & Bakery needs
v Effectively control costs of food and related purchases upon approval of the Head Chef
v Maintain a safe and healthy work environment by practicing safe food handling, FIFO, etc.
v Maintain sanitation and cleanliness standards
v Manage the pastry & Bakery team, including training, coaching, disciplining, and more
v Manage employee scheduling with the approval of Head Chef
v Foster an environment of customer service in which all team members put the guest first in every situation
v Follow company and departmental policies and procedures
v Act as the team leader in the absence of the Head Chef
v Other responsibilities as assigned by the Head Chef
· Education Qualification: A degree in Culinary is a huge plus.
· Work Experience: Minimum of 5 years of experience in an upscale hotel environment with at least 3 years in a supervisory role.
· Experience with baking pastries, cakes, tarts, pies, cookies, and breads
· Solid understanding of pastry and baking tools, and equipment
· Excellent pastry, bakery and cake decorating skills
· Practicing all general safety & sanitation standards
· Passion for maintaining a healthy and safe environment
· Solid communication and leadership skills
· Ability to read, write, and communicate in English proficiently
· Analytical & Interpersonal skills
· Above average computer skills
· High level of business acumen and common sense.
· Strong teamwork and a positive attitude
· Adaptability and willingness to learn
· Consistent & Punctual
